Vinification: Alcoholic fermentation in barrels for 2 months. Batonnages (stirring up of the lees) as required, determined by tasting and monitoring the wine.
Ageing 14 months: 12 in barrels on the lees without racking, then 2 months in vat. 100% in oak barrels, of which 30% are new.
Clarification: fining and lenticular filtration.
Notes de dégustation
This rich, red clay-limestone soil, in which the vines, planted in 1950, delve deep, gives the wine the round character of great white wines, underpinned and balanced by a lovely mineral structure. Fourteen months ageing on the lees draw out the natural qualities of this exceptional wine. It is already beautifully full and long, with notes of flowers, yellow fruit and citrus, when young. It is even more surprising with age – undergoing a veritable metamorphosis. It takes on a golden hue and even more body and substance.
Mets d'accompagnements
White meat in a cream sauce, scallops, lobster, good quality fish, or cheeses.
