Nyons PDO olive oil is a smooth and fine oil. It is protected by a Protected Designation of Origin since a decree taken by the INAO on January 10th, 1994, and is produced in the vicinity of Nyons, in the south of the department of Drôme (Southern France).
Variety: Tanche is the emblematic variety of the Pays de Nyons and the Baronnies Provençales. It is the only variety that has been able to acclimatize so well in Drôme Provençale.
Aromas: Nyons PDO olive oil, golden green in color and finely fruity, is characterized by dominant aromas of hazelnut and apple, which give it a unique taste.
Maturation & Harvest: The Tanche olives are left on the tree typically until December–January, when the first frosts wrinkle the fruit and concentrate sugars. The black olive from Nyons is finely wrinkled by the first frosts. This late harvest gives it its sweetness.
Terroir & Variety: At Domaine Saint Vincent in Vinsobres (Drôme Provençale), southern France, the olive trees are almost exclusively the Tanche variety — the traditional cultivar of the Pays de Nyons and Baronnies Provençales. This variety is prized locally for adapting superbly to the Mediterranean hillsides and clay-limestone soils.
Trees & Landscape: The estate has about 1,300 olive trees planted largely on terraces (restanques) that face south, with good sun exposure — a setup that helps olives ripen evenly and develop aromatic complexity.

PDO Nyons olive oil is perfect for seasoning summer salads, or as a condiment on hot dishes (grilled fish, poultry), but it is better to avoid using it in cooking, in order to preserve all of the aromas.
